Because this is a favorite of my daughter's and because it's Wednesday night. Also because I realize that I don't have an infinite number of Wednesday nights with my baby girl...who is actually a teenager. This is not for the diet conscious.
This is for those who just want to enjoy life while we have it.
Pasta a la Vodka
1 medium onion, chopped fine
3 cloves garlic, minced
2 T olive oil
2 T butter
1 cup vodka
1 10.75 oz can tomato puree
1 cup heavy cream (sorry, no substitutes)
salt and pepper to taste
red pepper flakes to taste (a pinch does me fine)
1 cup grated Parmesan cheese (get the good stuff)
1 pound bow tie pasta
Cook the pasta al dente, drain.
In a large skillet over medium heat, add oil and butter.
Add onion and garlic. Cook for 3 minutes.
Add vodka. Cook for 3 minutes.
Stir in tomato puree.
Reduce heat to low and stir in cream.
Add seasonings and heat through.
Pour over pasta and add Parmesan cheese. Toss together.
Garnish with more cheese if you like. (I like!)
